accra (malanga fritters)

Ingredients
1 egg
1lb of malanga, peeled and grated
1 tsp of ground pepper
1 tbsp of Adobo seasoning salt
1 scallion, chopped
2 tsp of parsley
1 cup of oil
1 tsp of onion powder
1 shallot, minced
1 tsp of garlic powder
   
Description
  1. Peel and grate the malanga. Mash it with a fork.
  2. Combine the remaining ingredients and mix them in well.
  3. Using a deep fryer or skillet, heat the oil until it's very hot over high heat.
  4. Pour a spoonful of batter at a time.
  5. Flip over to brown evenly.
  6. Remove and set aside. Blot with a paper towel to remove excess oil.
