INGREDIENTS

  • 3 tbsp of oil
  • 3 tomatoes, julienne sliced
  • 4 tsp of garlic powder
  • a few sprigs of thyme
  • a few sprigs of parsley
  • 2 tsp of ground pepper
  • 3 tsp of minced onions
  • 2 tsp of tomato paste
  • 1 box of chopped frozen spinach
  • 6 cups of water
  • 4 cups of coarse yellow cornmeal
  • 1/2 inch-thick sharp cheddar cheese
  • 4 tsp of butter

DIRECTIONS

STEP 1:

Add oil to a saucepan over high heat.

STEP 2:

Stir in the sliced tomatoes, garlic powder, thyme, parsley, ground pepper, thyme, and minced onions.

STEP 3:

Reduce heat to medium-high. Stir in tomato paste, spinach, and add water.

STEP 4:

Cook uncovered until it begins to boil.

STEP 5:

Add the cornmeal and continue to cook over medium-high heat, covered.

STEP 6:

Stir in the cheese. Reduce the heat to low.

STEP 7:

Add butter then stir. Continue to cook for 20-25 mins or until ready.

STEP 8:

Remove from heat. Serve with slices of avocado.
