INGREDIENTS

  • 2 sticks of butter
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 2 eggs
  • 2 bananas, mashed
  • 1 cup of flour
  • 2 cups of cornmeal
  • 1 can of evaporated milk (12 oz)
  • 1 can of coconut milk (12 oz)
  • zest of 1 lemon
  • 1 tsp of nutmeg
  • 1 tbsp of cinnamon powder
  • 1 tbsp of ginger powder
  • 1 tsp of baking powder
  • 1 tbsp of rum
  • 2 tsp of vanilla extract
  • 1 cup of shredded coconut

DIRECTIONS

STEP 1:

Combine all ingredients onto a mixing bowl. Mix well.

STEP 2:

Pour mixed ingredients onto a baking dish.

STEP 3:

Preheat oven. Bake at 350º for an hour.

STEP 4:

Let it cool. Enjoy.
